Sweet and Healthy Spring Salad

This fresh spring salad is an easy and healthy option for a quick but delicious lunch. The pomegranate dressing and the figs make this salad sweet and irresistible!

I have this thing with kale. The sweet and delicious taste, the fresh crispness…there is nothing else to ask for.

As you may already know, Cooked or raw, I love kale in pretty much anything! If you love this superfood as much as I do, you might like this tropical kale smoothie. But my number one meal with kale is definitely salads

Lately, I’m all about this kale salad packed with so many goodies. Fruits, veggies, nuts, cheese… name them all! I found the perfect combination of these ingredients to make the best fresh and easy spring salad! The secret of it? The mix of figs and goat cheese with the pomegranate dressing. It’s to die for.

 

Sometimes, salads are not as healthy as you think because dressings can be rich in fats and calories and full of ingredients you don’t need, but this salad dressing contain only one simple ingredient : pomegranate juice. Low in fat and calories, this sweet dressing is surprisingly amazing in salads. You must try it!

So here’s how to make this healthy salad.

Ingredients :

  • Kale
  • Dried figs, sliced
  • Cherry tomatoes, cut in half
  • Cucumber, sliced then cut in half
  • Red onion, chopped
  • Olives
  • Goat cheese (or cashew cheese if vegan)
  • Almonds or sunflower seeds
  • Concentrated pomegranate juice
  • Pepper

Directions:

Mix all the ingredients in the quantities you like and enjoy!
